As an American I just don't get it

As the title says, I currently have the Xbox One version of FIFA21 on my Xbox Series S. I can get the Series S/X version for free on the Microsoft store but I was wondering if I install the next gen version would it remove the Xbox One version as it's the one I want to keep since most of my friends haven't upgraded consoles yet and there is no crossplay between the versions of FIFA or will it automatically remove my Xbox One version and install the Series S/X version over it.
Looking for a trustworthy sharer and someone to rotate buying games with.

I have never played a Fifa game, but am familiar with it. I have a brother who plays it and a lot of friends who play it also. It seems whenever they play it they seem to get angry about something in the game, and they mention how very little changes each instalment.
I'm not judging, I'm just confused as to why people keep buying the games if they say they're unhappy with it a lot of the time.
I'm not a fan of fifa video games, but I'm curious. For those who have played enough of the series, what is the game that you consider the best of them all ?, or at least with the one you have had the most fun.
