A mistake in my online ordering has resulted in me having 10lbs of russet potatoes (which is a lot for 2 people who don’t eat a ton of carbs). Aside from the obvious (twice) baked potato, roasted potatoes, etc, what are your favorite potato recipes??

Can I make the ATK Potato Bun recipe with Dried Potato Flakes in place of Russet Potatoes?
Just like the title says, I'm trying to do this to keep a more simple approach to do in the future. Would I need to change much to do this, or what our your best recommendations to make this substitute?

For dinner tonight, I'm making a butternut squash curry with oven roasted veggies (carrot, sweet potato, and russet potato with broccoli on the side). I put cinnamon, fresh ginger, and red pepper in the butternut sauce.

Calories in a russet potato?
For the love of god how many calories are in a freakin regular potato? I keep seeing “1 medium potato” being 110 cals when I Google it, but I have what I believe to be medium sized potatoes, and I weigh them raw, and they’re coming out to 280 grams. When I put that into USDA, apparently my potato has 220cals? But it’s really like... a completely normal sized potato. Are the calculators going off of cooked weight? I’m so confused. I can’t believe a normal sized potato would be over 200 cals.

I'd love to transform these past just baked or mashed potatoes, potentially integrating them into a main dish of some kind.
I have a fully stocked spice pantry and tomorrow is grocery day so I can pick up any necessary ingredients. I have chicken, onions, buttermilk, lots of cheese, and some fresh greens (romaine and green beans) on hand. Also some pumpkin pie? Lol. Cooking level is intermediate/advanced for an untrained home-cook.
Its cold here so crockpot recipes and/or soups would be very welcome as well!

Both! I know sweet potatoes have a stronger reputation as being healthy, but russets have an advantage in a few categories, including vitamin C and potassium. While sweet potatoes do have plenty of Ws over russets, it's a lot closer than I thought given how demonized the typical potato is. Personally, I think sweet potatoes are much tastier, but diverse eating warrants mixing in a good ol' Idaho potato.
