No, the name is not borshT. It's just Borsh and here's how it's prepared in Ukraine and most of Russia. This particular way is my mom's.
For a nice size pot of borsh, make a beef stock, right in the soup pot (obviously you can avoid meat and just make a veg stock but it's less rich). Toss a pound of beef, a very meaty bone piece, I used a couple of cheap ribs. Bring to boil, skim, then add aromatics (onion, pepper, carrot, bay leaf).
While the stock is simmering, you're peeling and chopping: take 3 medium size beets, peel them all, cut one up into big size chunks, add those chunks to the stock any time to start coloring. Take the other two and grate it on the big side of your grater, then grate two medium carrots as well. Chop one onion, celery stock, and garlic keeping all separate.
In a large saute' pan start with Onions in oil/butter mixture, slowly, you've got time since stock is cooking, once starts to brown, add celery and carrots, once those get a bit cooked add beets, garlic is the very last addition after all the others have had a chance to caramelize. Add salt at every step and a sprinkle of sugar. Make sure you've got enough lipids. At the very end fry up a half of can (little ones) of tomato paste on the side of the saute pan, then incorporate, i also threw in a fresh tomato at the end here.
So now your stock has been going for about 45 minutes and is getting nice and aromatic, you add the entire saute mixture to the soup pot and watch the magic begin.
Let this cook for another 15 minutes or so and then add a finely chopped head of cabbage (not a big one, about 2 lbs) (no core, we're not animals). 10 minutes into this, add 2 peeled, large chunks of potatoes to the soup pot, dill.
Once potato is done, Vasya is your uncle. finish with dill and sour cream
