Can I prepare a Bordelaise sauce in advance, and if so, how far in advance?
I'm planning on making Bordelaise for NYE, with bone marrow and all, and if possible I'd like to make it at least a day in advance.
I've seen there's a lot of people from the restaurant industry in this sub, so maybe some of you have a tip on how the Bordelaise can be prepared in advance?
Also, bonus question: Since I don't have homemade beef stock available, will adding gelatine to a store bought liquid stock base^[1] help? Because I see a most recipes call for stock high in gelatine (or 'jellied' stock)

Bordelaise for the In-Laws
Iβve offered my services to make a bordelaise for Christmas this year and I have two questions on the topic. One is more specific, two is more general.

My father-in-law is making beef tenderloin. He usually opts to sear the beef on the grill then finish in the oven, leaving me with no dirty pan to work with. Any work around for this? Iβve heard of people buying fatty meat scraps and browning it then discarding the meat just to get the dirty pan. Worth it?

Any other tips or tricks for an unforgettable bordelaise? I used beef stock last time. I think this time around Iβll try veal stock or demi glace (store bought). Garlic? No garlic? Rosemary? Thyme? Anyone thatβs made a great red wine reduction sauce let me know what you did!

Any idea what a "walnut bordelaise" would be?
I often check out the menus of restaurants I admire for inspiration for home cooking. One dish that stood out to me recently was agnolotti with a "walnut bordelaise." It sounded delicious and also like a perfect fit for my vegetarian partner. The dish was labeled vegetarian on the menu. I'm curious if any of you would have an idea on how to go about preparing this sauce considering it is traditionally not vegetarian. Thanks!
