I'm rather new to PF2e but I've been very interested in the different ways you can build a class, with most choices bringing something different to the table.
This particular choice seems to come down to damage alone. Thief allows for a player to dump STR while a Ruffian allows a player to dump DEX.
On the surface I sort of assumed it was a preference thing, but the more I think about it the less I understand why you would choose Thief. Not only does the Ruffian get its keystat to damage natively, it brings an expanded list of better weapon choices (Maces, Longspear) along with an easier time using Athletic maneuvers in combat. The lack of DEX is made up with better armour, and it gets critical specialization 4 levels early as a cherry on top.
What does Thief offer that makes up for that difference?
And I have to note it is actually a lot more inconvenient as the tomato sauce dries and the beans are all over the bloody place!
I found a fun little interaction that I hope to run for my next character. Maybe it's been posted to death already, but I figured I'd share it anyway.
Mauler dedication(2) - Knockdown(4) - The Harder they Fall(6) - Improved Knockdown(11)
Ruffian Racket Rogue with a Mauler dedication wielding a longspear lets you deal up to double sneak attack damage without MAP by level 6. By level 11, you're dealing double guaranteed in a single attack. Your third action every turn will simply be used to set up flanking on any target that isn't already prone!
Toss this in with Shoving Sweep, Shove Down, and Stay Down, and you become the biggest jerk on the battlefield. Sneak up on your enemies with a Hammerquake, and you can deal sneak attack damage to every single enemy in a 9x9 cube, plus the sneak attack hit to the poor schmuck you targeted. They won't know what the hell just hit them!
It seems really fun.

I can't seem but to wonder what we would have got if it wasn't for an ("alambu" looking/pannachi character) Chemban Vinod in all his movies.
Like the other side of Churuli seemed like Chemban Vinods "hometown" actually.
I played my first pf2e character the other day, a dwarf mountain stance monk, and it was super fun! But I decided that I wanted to play something with a bigger focus on the social and skill part of the game, while still getting to play with the fun athletics tricks I could do as a monk.
Ruffian rogue seems like the best bet, as I I can get a bunch of skills, can still trip people, and have charisma for intimidation!
Other than that, any other tips for a good ruffian rogue build? This character is for pathfinder society one shots, so no uncommon content or much downtime. My goal with this character (other than just having fun playing some one shots) is to get an understanding of the system so I am ready for a longer campaign down the line where I will be playing a toxicologist alchemist, anything I should try out with this rogue to help prep myself for the alchemist? Any other tips?
