Is Xians famous foods authentic Chinese cuisine? What is that style of Chinese food called? Or maybe similar styles with lots of wheat products (noodles, breads, dumplings etc), spices and chili oil, lamb etc Have you got any resources(books, YouTube, sites or blogs) to learn more about these styles and some recipes?
Hi all! I'm hosting a dinner party where I'm intending to make Ottolenghi's Black Pepper Tofu (served with plain boiled rice), which is delicious (honestly one of the best things I've ever cooked/tasted, you all need to try it!) but can be very spicy! One of my guests has said she's not the best with spice but is game to try it as long as there's something cooling to go with it. Short of serving everyone a massive glass of milk with dinner, I was wondering if anybody could recommend something to serve alongside it that would serve a similar function to raita in Indian cuisine, but that is more appropriate to a Chinese main.

Would Chinese Islamic cuisine be a good option if I want to get into Chinese cuisine but don't like seafood and pork? Where can I learn more about this style of cooking? Are there any YouTube sources or maybe cookbooks?
I hate when I read a review on a Japanese restaurant and people are like โbest Chinese food ever!!โ Itโs not that hard people ๐ญ๐ญ I could go so much deeper with this, but this is all I will say for now. Go off in the comments!!!
