Why did american infantry rifle regiments not get completely replaced by mechanized in WW2?

It seems like they were equipped for assaults with the use of grenades and the thought that went into the BAR (a light machine gun that handles almost like any rifle). There was only 2 medium machine guns per company in 1944 and no ATGs (because well, ATGs are more effective if you can quickly move them around to where the tanks are going to be; hence them being in the armored infantry companies, rather than just the infantry rifles).

It seems to suggest that they were not entirely exceptional for defense, and only had some capacity at that. I didn't see any engineers in the regiment for assisting in defences (ie. land mines, barbed wire, etc.). What advantages did they really have compared to mechanized US infantry? Certainly not speed or attack. Were they just there to fill out an army ("eg. not enough vehicles atm, but lots of men, so send em in")? Were they for forest and urban fighting, or for being sneaky (ie. less vehicles means a smaller target)? They weren't light infantry for mountain warfare, nor were they airborne that could jump in wherever there wasn't too much enemy anti-air...
