An Overview of the Papain Market:
I'm trying to figure out if I can properly supplement Papain for nutrient absorption using raw papaya. I've been using papaya for fruit flavor in a low-FODMAP diet I have assumed, and figuring out how many PUs (Papain Units) are in a certain amount of papaya fruit flesh has been a confusing mission. I even tried looking it up in scientific literature but NCBI only has discussion of papain's proteolytic and other therapeutic activities, not it's exact concentration.
I do know that there is more papain in unripe papaya, but I have no interest in that--part of this is about flavor!
I've been searching /r/AskCulinary for suggestions on making the intensely-beefy skirt-steak more tender, and time-and-time-again I see in the comments: "if you marinade meat with pineapple, it turns to mush".
I'm convinced there must be a short amount of time that you could marinate the meat *without* it essentially disintegrating, e.g. 30 minutes in the protease after jaccarding.
