Until December 31, 2018 I barely ate vegetables and ate meat for every meal of the day.
At the start of this year, I first decided to try minimizing my pork and beef intake - giving it up completely wasn't part of my initial plans, I just wanted to see how much I could reduce my meat intake.
Fast forward to January 31, and I've spent 29/31 days of the past month pork and beef free (January 1 and an accident for the other time..), 3 days pescetarian and 7 days vegetarian (with all 7 occurring in the last ten days of the month). For the rest of the days, 2 out of 3 meals were vegetarian or vegan. I thought giving up chicken would be impossible since I love it so much, but I'm starting to see it as feasible and not so daunting.
I've never felt more energetic, my skin is glowing and I've lost 13 pounds with no exercise and without having to give up snacking, eating out or chips lol.
I wish I've done this sooner! This was also the month I also started learning how to cook, and I hope everyone can share their favorite vegetarian recipe in the comments below - feeling really inspired to keep going and reduce my meat intake even more!
It's hard. Very hard. I'm hungry and meat is everywhere. My family eats it. The TV constantly advertises it. However, I will endure. I don't half-ass things when I believe in something. This is all part of my larger empathetic and political awakening (took long enough). What is a life if it's not spent doing what is right?
Ive started cooking a little and im wondering do italians really eat all these things that often? Every recipe is like 2 tablespoons of olive oil minimum, for 1 person, pancetta, red meat, butter.

My dad went to Montreal for business trip and brought back bunch of souvenirs, including 3 grocery bags full of Montreal smoked meat.
I froze some, ate some as is, put them in rye sandwiches and used as topping for poutine. But there's still so much more! I'm not sure what more to do with the rest. Any ideas?
I had thought about doing it for years, but always found a reason not to. I had a crummy immune system, and was always getting sick with a cold or the flu or something, and was told that if I didn't eat meat, my immune system would be even worse.
1,000 nights ago, on my birthday, I had a drunk "epiphany" (for lack of a better word) where I decide that it wasn't right for me to be eating meat, since I'm a life-long cat owner/lover. I decided that the next day I wouldn't eat meat and that I'd only eat it on weekends. However, I quickly saw how easy it was to abstain and I never did the meat weekends, and I never ate meat again.
Since then, I've been sick literally like 1/6th the amount that I would have been. I've been way less lethargic and feel more energetic. I don't feel toxic after eating (like I would with certain meat meals). And I'm able to not feel guilty whenever I'm around animals!
I certainly appreciate how lucky I am to have the vegetarian advancements in mock-meats that have happened in the very recent past, because I'm not sure I would have been able to do it so easily.
Anyway, I just wanted to share my story as a small form of me celebrating 1,000 days!
Started off my journey by just thinking about minimizing my pork and beef intake starting January 2. I've only had pork or beef three times since then, one of them accidental. Lost all cravings for pork after having a slip earlier this month and found bacon SO bland.
When I started, giving up chicken was out of the question. I love chicken so much, even until today, but the more I started eating veggies the more I started craving for it and adopting a plant-first mindset when it comes to choosing my food.
I don't know how far my plant-based journey will go, as I live in a country where people eat meat 3x a day, the common citizen has no idea what vegan means, and some servers think vegetarian means not being able to eat anything fried in oil. As much as I would love to go full veg, that would mean starving whenever I go eat out with family and friends (which is a huge part of the culture here).
I believe in progress over perfection and long-term sustainability, so I might still grab chicken once in a blue moon or go for fish/seafood while eating out if the other option means settling for shredded corn and carrots (yup, the veg options here are mostly non-existent).
One thing's for sure - meat will never be the first option for me ever again.
I went a really long time, but my grandma kind of pressured me into her turkey tacos, and if I didn't eat it I would probably starve in the house. I can only eat noodles and ice cream for so long. I feel kind of bad and gross, honestly, and disappointed.

I've been vegetarian since May and I often wondered if I've just been convincing myself that I don't miss meat. But last weekend I took a bite out of a sausage made of free-range locally raised meat, and could barely stomach the first bite. This was sort of a personal victory, and I just wanted to share!
