So r/homebrewing, what's your most unusual and successful homebrew and most importantly why does it work?
**Backstory on my beer: **
I tend to shy away from adding non-fermentable adjuncts to beersβwith the exception of spices and fruit where appropriate. (e.g. wits, gose, sours, etc.) So I haven't played around with them that much. However, after having this beer, I was inspired to do a sour chili beer. Luckily, I had a 5 gallons of berliner weisse done with the wyeast blend at the time.
I ended up splitting the batch and adding in 200g of glucose (dextrose) for the lacto and 16 g of [aji panca] to one half (http://www.seriouseats.com/2010/12/spice-hunting-aji-panca-chile-peruvian.html) chilies for a month. The result? A nice chili flavored beer with a backing of lacto and breadiness in the finish. The heat and aroma is just enough that you notice it and grows with each sip.
I gave to some homebrewers at my club who were equally impressedβseeing as if you're the only one who has tried/liked it...it may not be as successful as you thinkβwhich inspired me to post this.
