Which is scarier: A fast vegan zombie or a carnivorous slow zombie(both try to infect you, though the vegan ones will not bite you, maybe spit on a knife instead)?

After securing the basics, with the new profficiency system it took me all summer to make a weapon that was better than my starting knife. Meanwhile, the draugr were training I'm hopelessly outpaced by the zombie difficulty increase. Am I just screwed?

Is there a way to dial back the zombie difficulty or something? I'm not above cheating or editing saves at this point. I just don't want to lose my character or, worse, have them sit safe at home boringly tending the farm for the rest of time. I can't craft any better armor or weapons particularly because they all require materials that must be looted from town, and going anywhere near town is a suicide mission.
