It has been quite some time since I started this project, but a message from a curious redditor has inspired me to update my progress.
I did ultimately go with a Cradlepoint IBR1100 for my central hub and added a USG and some more P2P/P2MP antennas. The MoFi after months of field testing, is great for personal use, but is not an Enterprise hub by any means ...
I am happy to report that my implementation went off quite well for 3 Events and I have now been steadily consulting on other projects since then. I have even begun selling my build as a kit:

With the Cradlepoint 1100+External YAGI, and a Single T-Mobile SIM card (3rd party unlimited data plan) as the backbone of my Network, we were peaking close to 200 active clients and pulling 75+ Mbps. We had a flawless Point-of-sale experience across close to 100 devices and had close to 8000 attendees on site. I was able to cover over 150,000 SQ feet with my setup and installation took only a couple hours with myself and one other person, including config changes and site walks/speed tests.
In one implementation we ran a site with the 4G connection for 2 days and then had a connection beamed from a condo about a half mile to our site, which then became the primary WAN (With immediate failover to the SIM).
All things considered, I learned a ton and have been making continual improvements during and after each show. But I am very happy I went with Ubiquiti and Cradlepoint for my needs.

I work as a SysAd in the USAF and frequently travel to help my brother produce music festivals.
Most of the time I don't help him with IT work, (I do bar/site logistics, equipment operation) until last year when he lost his normal IT guy. I offered to step in and assist (Point of Sale tablets, WiFi/3G+4G Uplinks) - that was when I found out just how absurd the prices he was paying for everything. I won't get into that, but I decided to propose a site plan for a deploy-able WiFi solution that I will pre-configure and manage at any show that I work, but can remotely manage for shows that I am not/make it straight forward for him to hire someone in my stead.

It's REALLY fun. Not sure many of you use it, but would love to see more activity. The idea is simple: Facebook is so, so dumb, because I know all those people in the real world, and we're friends, and it is okay, but my friends and I have wildly varied hobbies, interests, etc. If I started talking Khruangbin, Fat Freddy's Drop, Jai Paul, Charles Mingus, Bach with them, their eyes would glaze over. What's more, for collectors who constantly reorganize their music collection chronologically vs alphabetically, or dote over specific releases that *you* know are timeless perfection, but no one else knows.... well discogs lets you comment on the specific releases and band, etc, and you can really engage other people with similar interests, and similar tastes. I've already found some cool recommendations, inside baseball chatter about specific releases, etc. Just my two cents, and thought I would spark some discussion! =) Social makes more sense when it is around interests (like Reddit), vs real world connections. I know those people, I don't want to talk to them. LOL That's a joke, but you get it. See you here. And on discogs. =)
