Best Grade of Steel?

Hey folks,

I am planning to make a griddle top for my bbq grill. I've looked into a couple of options (like steelmade), but I'd like them to be thicker. That leaves me with custom fabricating one - and I'm honestly not sure what kind of steel to use. Steelmade claims they use mild steel, which isn't what most people would call carbon steel.

Does anyone know what the recommended grade of steel (like 1045, 1080, A36, etc) is for carbon steel cookware?
