Made Kenji's recipe for Ropa Vieja recently.
The meat (flank steak) was kind of chewy and slightly tough.
Should I just cook it more to break the meat down? Or was it over-cooked, which made it tough?
I have a friend that basically swears to me that authentic Ropa Vieja is made with tasajo beef. I didn't even knew what tasajo was. So to settle this question I need some feedback from any Cubans.
Should ropa vieja be made with tasajo only? Does it matter? Are they different dishes (as some people mention on the internet)?

Briefing

Situation

To find these locations you will need to interrogate Che Guevara on the roof of the Hotel he has garrisoned(dangle him off all 4 corners DON'T DROP HIM TILL YOU GET THE LOCATIONS).
Enemy Forces
- You will encounter enemy vehicle patrols and roadblocks.
- The enemy will most likely use Mi-8 helos to shuttle around QRF teams.
- They have only a few working BTR-60s
Friendly Forces
- No additional friendly forces. Be aware of civilian drivers.
Civil/Terrain considerations
Due to the vehicular presence, it's best to stay off the roads.
