In my pre-vegan days I used to love paneer tikka masala. When ordering at an Indian takeout restaurant now, what would be the closest/most similar dish?

Curious if anyone has specific favorites. I've tried a ton and none have resulted in the great British pub style, hearty gravy that is the best.
Examples of meh recipes include nyt and serious eats. I've also dug up and not loved ones from old reddit threads. The Indian guy recipes are closest but still not quite right.

Everytime I try to make paneer tikka masala, paneer ( coated with batter) sticks horribly to bottom of pan. for 2nd try, I applied ghee generously to the pan and heated it on medium flame. Still, same thing all over again,entire pan get coated with paneer sticking to it.
how do I deal with this?
Paneer Tikka Shashlik and Paneer Tikka Masala
Video recipe (about 4 minutes long)
Ingredients-
For Paneer Shashlik:
Paneer - 250 gm
Capsicum - 1 small diced
Onion - 1 medium (petals)
Hung Yogurt: 1/2 cup or 100 gm
Degi Mirch : 1.5 tbsp
Roasted Cumin Powder : 1/2 tbsp
Coriander Powder : 1/2 tbsp
Garam Masala : 1/2 tbsp
Turmeric Powder : a pinch
Ginger- Garlic Paste : 1 tbsp
Lemon juice : 1 tbsp
Mustard Oil : 1 tbsp
Gram Flour or Besan : 1 tbsp
Salt to taste
Any Oil to cook
For Gravy
Any cooking Oil : 1 small spoon
Butter : 30 gm
Ginger Juliennes and Finely chopped Green Chillies: 1 tbsp
Finely chopped Onions : 3 medium size
Ginger Garlic Paste : 1 tbsp
Tomato Puree: 1 Cup
Degi Mirch : 1 tbsp
Coriander Powder : 1/2 tbsp
Garam Masala : 1/2 tbsp
Amchur or dry mango powder: 1 tsp
Fresh Coriander Leaves : handful
Blanched Cashew Paste : Made by grinding 15 cashews with water.
Salt to taste
Water as required
Written recipe:
Step 1: Soak the bamboo skewers in water for 20 minutes.
Step 2: Now in a bowl, add all the ingredients listed under shashlik (except for paneer and veggies) and mix with a fork.
Step 3: Add Veggies and Paneer and gently mix with your hand.
Step 4: Cover and let it rest in refrigerator for atleast 30 minutes. The longer it's resting in the fridge, the more flavour it'll absorb.
Step 5: Take it out of the fridge and start piercing the veggies and paneer in the skewers.
A regular size skewer can take up to 2-3 sets of paneer and veggies.
Step 6: Prepare all the tikka like this and let it hang in deep bowl (see video for reference)
Step 7: Now heat up a grill pan or a tawa and grease it.
Step 8: Turn the flame to high and place tikka on the pan.
Step 9: Keep turning the tikka and cooking on medium to high flame. Keep basting it with oil to keep it moist.
Step 10: Once all the tikka are done take them out in plate and place an activated charcoal in a small bowl and pour some ghee over it and immediately cover it for 5 minutes. This gives a nice smoky flavour of tandoor.
Step 11: You can serve these as is with some green dip and onions and lemon wedges.
For Masala gravy:
Step 1: Heat a wok on medium flame and add little bit of oil. And then add 30 gm of butter.
Step 2: Add green chillies and ginger juliennes.
Step 3: Add chopped onions and saute till translucent.
