Similar questions have been asked here but no construction detail specifically. I live in Australia so a Yatai is completely non existent here, and I have a week off work over NY so keen to break out my carpentry skills, and most importantly I LOOOOOVE ramen.
I have watched heaps of Yatai setup videos on Youtube, I get that they're all slightly different to each other (as apparently they are usually made by the owner) however they all seem to have a common base metal frame (which I will substitute for a wooden assembly here).
As much as possible I want it to look as authentic as possible. So if anyone can share things like the counter height from the ground and some pics inside and in the roof area that will eliminate a lot of questions I have (as these aren't really shown on google).

Admittedly, I've never seen one in person, but none of the videos or pictures I've seen have any mobile vendor using baskets to cook their noodles, even when making several bowls at once. Instead, they cook them all in one big pot and spend a fair bit of time and effort (in terms of fast food) chasing them around the pot and dividing them between different serving bowls.
