Throughout lockdown this has been my weird craving. Does anyone know of any sushi places that have decent Uni?
I got a few sea urchins and I was curious if you had advice for any simple dishes you all would recommend?
DISCLAIMER: I know nothing about sea urchin foraging.
Years back I used to dive for abalone. I recently started looking into foraging for sea urchin. I thought it would be a good hobby to learn about and pick up. Are there people around here that forage for sea urchin? Are there nearby locations I should go to? I do not have a boat, but as mentioned I have experience diving for abolone, so are there spots I can ideally get to by swimming from the beach? I only need enough for my own consumption, so not necessarily looking for spots with thousands of sea urchin. Thanks in advance!
Edit: thank you all!! I ended up trying Tsuni uni and Sakanaya! Passed up on hmart since the color was black and said product of Mexico.. both tsuni and sakanaya were fresh and right out the water. Iβd get Tsuni again near downtown area in Boston and Sakanaya if near Newton. Thank you all

I want to purchase a package of roe/uni, but the amount in the package is large, about 80-100 pieces. While I looove it and would eat it in a day or 2 if I could, it's not practical and not cheap. My plan is to make some as sushi, and also some for pasta, butter too.
My question is, have you ever tried to freeze uni? If so, did it make the texture terrible? I figured maybe if I freeze some I'd maybe be able to use it for sauces or butter...but any other ideas? Can it still be used for sushi and taste good?
Went to Nijiya market yesterday excited to get a bunch of sushi grade fish. Was really looking for a large tray of Uni and they had these microscopic trays for $16 that looked like they had about 1.5 β nigirisβ per package and it looked like they had been put through a blender. . Iβm looking for a better source and quality that is more resembling a βtongueβ or fatter / firmer roe.
