Shiitake Mushroom Dermatitis
My husband has had a crazy whiplike rash for 6 days. It looks like heβs scratched himself all over. Itβs very itchy, but he isnβt scratching it! My google search found very similar looking rashes caused by eating undercooked shiitake mushrooms. Itβs very rare in the US. I thought about everything heβd eaten last week, and I found a prepackaged meal than had raw shiitake mushrooms in it. Heβs been on steroids for 4 days, topical creams, and antihistamines. Nothing is working! Any ideas?

A month ago I ordered dried Shitake mushrooms from Japan. They were wonderful, I was using them in everything for like two weeks. I was rehydrating them and making power from them in my spice grinder. After a week I developed a rash all over my body and I deduced through doctor Google that is was "shiitake mushroom dermatitis". No shit, it is a thing. I have never had a reaction to mushrooms in my life. I read it might have been from under cooking or the breathing of the spores from the grinder. Man I was mainlining those things. I threw them away and I am rash free. Fuck, I loved those shrooms.

TIL about shiitake flagellate dermatitis, a skin condition caused by eating undercooked or raw shiitake mushrooms that leaves a rash appearing like long scratch/whiplash marks on the neck, face, limbs, and abdomen.

do i need to wash dried shiitake mushrooms before grinding into mushroom powder? if so, how?
i assume they should be washed but i want them to remain dry for grinding :/

Shiitake mushrooms = steak?
So this morning I popped some shiitake mushrooms into the air fryer (countertop convection) after tossing them with a little avocado oil and salt. Cooked just until the mushrooms were tender (about 6 minutes). And omg- it tastes just like a tender piece of steak. If I closed my eyes you couldβve tricked me.

Shiitake mushrooms in bulk
Once upon a time I could get these suckers fresh in bulk at a number of Loblaws-affiliated stores (Zehrs, No Frills, etc) but since the pandemic the majority only have them intermittently prepackaged, which tends to be smaller shrooms and a hefty $5 price tag. The No Frills in the Forest Glen Plaza does still have them in bulk but if I don't go early on in the fresh produce shipment week I end up being SOL. T&Ts never seems to have them in fresh.
Does anyone know of or can recommend a place locally I can get them in bulk?

How to tenderise rehydrated Shiitake mushrooms?
Every time I try to do it they come out tough and chewy. I use shiitake from overnight shiitake dashi.
I noticed in many places that shiitake toppings are soft and beautiful in texture to eat. I tried sautΓ©ing them for 6-8 minutes but this didnβt help.
How do you do it? Do you have to use fresh shiitake maybe?? Or what?
