Hello all,
I bought myself a copy of An Invitation to Indian Cooking last week, as the chicken biryani recipe came highly recommended.
(You can find it here - https://www.recipelink.com/msgbrd/board_3/2003/APR/7225.html. I can't seem to copy and paste the recipe text to satisfy the subreddit's rules, unfortunately. Apologies but I did try.)
I followed the recipe, as written, faithfully but ended up with a mushy and unappetising bowl of rice and chicken for my efforts (which probably included 4 hours of active prep and cooking time).
I'm trying to figure out where I went wrong and have come up with some ideas:
I was terribly disappointed with what I made but I can only imagine the blame lies with myself, given the reputation of the dish. Would anyone else be able to suggest where I likely screwed up?
I'm looking at all the Jaffrey books (https://en.wikipedia.org/wiki/Madhur_Jaffrey#Bibliography) and looking for a good first one. I mainly cook vegetarian, but I see there are even several of those (1981, 1983, 1998, 1999, 2015).

I'm thinking of buying a friend an Indian cookbook, but they find the Madhur Jaffrey cookbook a bit too bland and Americanized.
Any recs for cookbooks that are more fiercely flavorful? Thanks.
I have a couple of her cookbooks and she keeps referencing green chiles. Now I live in southern New Mexico and we have a mess of different chile peppers that are green (Hatch green chiles, jalapenos, regular poblanos, serranos, etc,). My question is which type comes closest to the Indian ones she uses in her recipes?
I just picked up the new "instant-pot" version of her cookbook. So far I've only tried the "Chicken cooked with Kerala's seasoning", but it was very good. Anyone else have this cookbook??
I first heard about this book on the No Meat Athlete podcast, and Iβve recently been making recipes from it. Not all recipes are vegan, but enough are that this is a book worth getting. There are other recipes besides beans as well, but the bean section is extensive with some great recipes.
Also, Iβm always on the lookout for cookbooks/blogs that have cheap, simple recipes, especially if they are bean or rice-based. Let me know if youβve found any that I should take a look at!
