Made this for Mother Cocktail Bar yesterday! - Green Jasmine Tea - 7 days brewed at 24 degrees Celsius - Flavored with fresh orange juice (10% of the total volume), Pears (skins and pulp), dried lemongrass - Second fermentation with 3g of honey each 2L of infused liquid. Delicious.

Already scented with mint using the same process and keeping the essential oil next to the snuff. Is so subtle and so nice.what I am trying now is add a hint of lemongrass. Trying to recreate a mint/lemongrass tea I like a lot. Quite impress how well this process works.

Can you cut lemongrass with a Gyuto?
I've heard a lot that you shouldn't use a gyuto to cut hard things. Lemongrass is pretty dang hard.
Would it be okay to use my gyuto? Or would it be safer to use my deba, which I normally use for fish and poultry?
Still learning how to use my Japanese knives correctly :)
Edit: Just an update to all. I beat up the lemongrass quite a bit, cut it with my deba, and it worked really well actually

Question about cooking with whole lemongrass and whole garlic cloves?
Hi everyone. I'm following a recipe tonight for coconutty mackerel curry and one of the steps is to cut the lemon grass in half and put it whole and the garlic cloves are to be peeled and crushed with a knife and chucked in. I've never used lemongrass and never put garlic in whole in a recipe. Does the garlic dissolve and won't end up biting into a whole clove? And with the lemongrass do you remove it after cooking or do you eat it cooked whole in finished recipe? Sorry if it sounds daft but never used them in this way! And recipe doesn't state what to do with them. It uses ginger whole too but it does tell you to remove this at the end. Thanks
