Ezio's robes in AC2 look completely unsuited for social stealth. He doesn't look like anyone else in Florence and Venice. I had small gripes about Altaïrs robes, mainly the beaked hood (cumbersome, would limit vision) and the weapons being openly displayed) but at least he looked somewhat like Scholars.
Ezio's robes in Brotherhood are the flashiest of the series. Why would an Assassin wear giant Assassin's insigna on their belt? Why the pure white clothes that points "I'm the assassin, you're looking for me"?
Revelations robes were pretty solid. Didn't stand out too much, but Ezio looked a bit too threatening due to the bulk and of course, all the weapons he has in plain sight.
AC3 has naval robes when during that time period soldiers basically wore whatever was available and with the feathers, tomahawk and bow strapped to him, he isn't inconspicuous. The beaked hood also.
Black Flag looks almost perfect until you get plated armour (but that's optional). You just look like a traveler with guns and swords. Too bad Edward is armed to the teeth and looks like a clear threat.
Shay Cormac is great at fitting in. Except for the obvious Templar cross, he just looks like a rich person or member of the elite.
Arno's robes look ridiculous, but with the right amount of customisation, he can look fairly inconspicuous, save for the hood.

Bayek's outfit is probably the best in the series from a realism standpoint. There's nothing too glaringly assassin-like about him. He just looks like a traveler. The time period helps too.
