I'll be cooking on NYE in a rental house for a group of 10. Looking for a protein that I can slow cook (preferably in the oven) while I prep other things. No idea what's in the kitchen so something I could slow cook/braise in one of those foil grocery store pans would be great.
I usually end up making either carnitas or pulled pork for stuff like this, but would love some other ideas. Thanks!

I used to think collagen supplements would just be broken down in the gut and their benefits are all snake oil. But primary literature supports that they do help with promoting collagen synthesis in participants compared to placebo. But low protein diets are common among the public and I can't believe I can't find a single study that includes a control group consuming say whey protein to confirm that the benefits aren't just higher protein consumption. Anyone done any further digging?

I am currently working on a computational protein-ligand design problem and due to the nature of our approach we have a set of described interactions between protein residues and certain functional groups. Those functional groups are fairly limited, mostly just ones that show up in protein side chains, such as carbonyls, carboxylic acids, thioethers, thiols, hydroxyls, amides, amines and some aromatic things.
In terms of ligand-binding, can other functional groups be approximated to have a similar interaction to the ones I listed? The main examples I was considering were,
ether -> thioether, ester -> carbonyl, sulfoxide -> carbonyl, thioketone -> carbonyl.
The alternative to the approximation would be to not consider the interaction too heavily and mostly treat it as mostly hydrophobic.
Any input would be much appreciated!
