As you already know, the lores are as good as their plausibility. So here is some ethnic, social, and religious background for Turkey.

- Any lore giving some parts of Turkey to Greeks and Armenians is totally illogical. Especially the land claimed by Armenians, including OTL Armenia, is populated by Turks and other Muslim subjects at a rate of 20:1 against Armenians any time after the 16th century. If you include Azerbaijani and Iranian lands, this is 30:1. So, not even Stalin had the power to give those lands to Armenians. A possible following uprising would crack the Soviet integrity.

Same with the Greek claims with at least 5:1, including OTL Greece. Actually, in the OTL Greeks tried and failed due to this.

The same goes for Iran, an Iran dominating Central Asia is a Turkic majority Iran, and can no longer be called Iran. Even if we exclude Kazakhs and Kirghiz, the remaining population of Central Asia combined with Azerbaijan and other Turkic groups scattered in Iran would make almost 70% of Iran's population. Even now, Turkic groups make almost 40% of Iran's population.

- If we are talking about a Greater Turkey integrating Turkic states, especially a union with Azerbaijan, then it must be under a secular state. You see, after the Seljuqs, any kind of leadership in the Middle East was in the hands of Turks. Sunnis were headed by the Ottomans, and Shia were headed by Azerbaijanis, though usually ruling over Iran as the ruling elite of Iran consisted of Turks until the Islamic revolution. Even the Druze community is still under the leadership of a Turkish ancestry family, Janbulats. Janbulat is an ancient Turkish word. So, Turkic people are divided under a lot of different religious denominations and religion is not something that brings them together but divides. Moreover, Nationalist sentiments are stronger, especially among other Turkic populations. Fun fact, the fathers of Turkish nationalism were all born in the Russian Empire and members of Central Asian Turkic communities. Turkish nationalism is inherently secular. Long story short, no caliphates or other bullshit.

- Kurdistan neither has a coast in the Black Sea, nor in the Mediterranean. In fact, the only Kurds in the Black Sea region you can find today are either public servants or university students. There has never been a natural historic Kurdish presence north of Ağrı province in the East and north of Adıyaman province in the Westernmost part. Many ethnolinguistic maps also show
