Yeah, no shit, theyβre two different cuisines. If your only exposure is Taco Bell, I feel bad for you but can understand why you look down on it. Like any cuisine when made with fresh ingredients itβs amazing. If you like other cuisines more than it thatβs fine, but pretending itβs not a legitimate cuisine because it was created by the immigrant experience youβre an idiot.
If you think flour tacos with ground beef and cheese are Mexican cuisine then youβre also an idiot.
Actual Mexican cuisine is also absolutely delicious. no shade on it.

And also is New Mexican cuisine and southwest cuisine the same thing?
So when I hear about Tex-Mex, three main ideas seem to be put forth:
That it was created to appeal to Anglo-American tastes
That it's how unsophisticated Anglo-Americans make Mexican food
It's the way that people primarily of Mexican descent prepare and eat food in Texas and on both sides of the border especially in areas with a long history of a descended Mexican population.
All these could be Tex-Mex yet #3 is almost never considered. Much of Mexican food in Texas and states in the U.S. along the border is influenced and connected to traditions in Northern Mexican cooking, which often has more European influence and is heavier in dairy, wheat flour, and frying than the interior of Mexico.
I've heard people over the years make claims that burritos are Tex-Mex, flour tortillas are Tex-Mex, nachos are Tex-Mex, fajitas are Tex-Mex, even tamales (wth?). Are they common to Tex-Mex cooking? Yes. Are they solely found in Tex-Mex? They're not. The way they're prepared might be different from much of Mexico and they might have different names, but they are of Mexican origin nonetheless and may be prepared in similar ways on both sides of the border by people of Mexican descent. I've even heard some of these claims made by Mexican people themselves, most people being unaware of the food traditions of Northern Mexico, holding Central Mexican cooking as being more authentic. To me, Southern Mexican or Yucatec cuisine is more distinctive from mainline Mexican cuisine than Tex-Mex.
If you want "real" Mexican food, don't use lard or any animal fat, no chicken beef, or pork. No wheat flour, no dairy, no cumin, cinnamon, cilantro, table pepper, cane sugar and a host of other spices. Nothing introduced by the Spanish and Europeans. You can't get more "authentic" than that.
Edit: Yes, although it's recognizable as being of Mexican origin doesn't necessarily make it "Mexican". And it doesn't stop it from being terrible to some people.
These days the "in" cuisine is Korean food, but i've been curious about trying to find southern US / texmex food to try within SG. Jambalaya, Gumbo, crayfish and Rice and Gravy all look appealing. Also ideally would like a recommendation less expensive than The Cajun Kings if possible
I am no where near north america so we don't have access to sour cream. What's a good alternative ? We have crème fraiche, can this be a good alternative ?
