I want to try to make Irish stew like my Jewish American mother used to make (lol). I'm not sure what kind of beef to get. Recipes often have names that I don't see when I go to the supermarket.
The beef she used was stringy (not in a bad way) and it fell apart if you glanced at it. By stringy, I just mean that as it fell apart, it seemed to be made of loose fibers.
Does that make any sense to anybody? If you know what type of beef that might be, I'd like to know what it's called, so I can ask for it.
I know from Google searches that Irish stew as made in Ireland is usually made from lamb, but I'm just trying to replicate how my mom made it. Also lamb is probably harder to find around here.
