What suggestions do you have for an upscale/gourmet diner food dinner?
For NYE we have for 25 years had a dinner party that starts out with food to be eaten standing, and then moves to a 5-course + palate cleanser sit down dinner. This year the theme of Upscale/Gourmet Diner food has been chosen.
Ideas include; Poutine: fingerling potatoes and brisket, grilled cheese/melt: small Croque madam with prosciutto and quail egg, deconstructed banana split, or mac'n cheese waffles
So what ideas and suggestions do you have for any of the standup or sitdown portions?
The sit-down courses are typically soup, salad, hot appetizer, sorbet, main, dessert. All at half portions or less.
EDIT: Thanks all for the great ideas. So much to absorb and think about. I do agree, elevating a dish is often about presentation (such as deconstructing, or shape and garnish), but elevating the ingredients matter too (lobster in mac'n cheese). I love the ideas that transform the dish while keeping a tie to the inspiration (chicken soup becomes chicken stuffed tortellini in chicken consume, chicken nugget becomes croquet, tomato soup turns white) or adding flavors from different cultures (poppers become Mexican poppers). And yes, we have to be very careful in portion control and not have things too heavy at the end. Even though we eat over six hours, it is a lot of food.
