In far eastern cuisine, why does it seem like there is less emphasis on browning of meat and getting a crust or some kind of maillard reaction.

Maybe it's just me, but I feel like in western styles of cooking you are trying to brown your meat as much as possible to get the maillard reaction going and in many Asian dishes that I see tutorials for that is not done nearly as often. I watch some of these recipe videos and I can't help but wonder why one would not put some color on the meat before adding it to the dish.

I used to date a girl from Changsha. One night she was cooking dinner and I watched her boil cubes of beef, then strain out the liquid, then rinse the meat because she "didn't want it to taste too meaty". I'm an American and this seemed like sacrilege.

Another example would be one of my recent attempts at making a thai green curry, browning the chicken before it goes into the sauce is not one of the steps. While the sauce and vegetables in thai curry are typically delicious, the meat tends to taste like it's an addition for the sake of nutrition and texture as opposed to being there for flavor.

I'm not saying one style is better than the other, I'm mostly just curious as to why there is this a difference in trends and what are the pros and cons of not browning ones meat.

Sean Sherman on the revitalization of Indigenous American cuisine

Americans (I'm too late for Canada, sorry!), while thinking about what to put on the Thanksgiving table, consider some of the plants and animals that have been all but erased from American culinary history. Even if you'd prefer to ignore the legend of wholesome Pilgrim and Indian cooperation, we can still maintain the best part of the Thanksgiving tradition--bringing your family or friends together through the celebration of indigenous foods.

Try the Local Cuisine! A Generator of Foreign Flavors

After reading about kiviak (a real thing that exists in our world), I thought about how few truly local cuisines I’ve experienced in the boundless worlds I’ve visited in RPGs. So, here’s a little (mostly silly) way to solve that.

If you ever need some local flavor in a foreign part of the world, just use this generator to make some local cuisine.

WTF Is the Local Cuisine Generator: https://localcuisine.github.io/ All local cuisines include the ingredients, recipe, and how to eat them.

I hope some users find this helpful, fun, or inspiring.

WTF Is the Local Cuisine Generator was lovingly created by Gollicking users: u/RexiconJesse, u/Mimir-ion, u/zweefer, u/PaganUnicorn, & u/Painshifter .

Oh right. I forgot to add this. My website has more RPG ideas to steal. rexiconjesse.com/

Edit: I wasn't expeting that many people to enjoy this. I'm so glad to see there are people who do. And even a silver. Thanks, friendos.

Identification of Egyptian cuisine !

https://www.google.com/search?q=kourabiedes&tbm=isch

Now as much as this was a shock for everyone including myself it’s time to indicate/distinguish actual Egyptian cuisine that we invented other than popular dishes that we took directly

Actual dishes are

1- full medames is ours 100% with it’s different recipes and it originated from us

2- koshari ( koshari is an egyptian dish which has a completely different indian version called khichidi in india )but both are extremely different

So koshari should be regarded an egyptian 100%

3- falafel , taameya ( it’s ours and we are the original ) other types of falafel were inspired by ours and that’s a fact

4- duqqa (Ψ―Ω‚Ψ©) dip is ours 100%

5-hummus (ΨΩ…Ψ΅) is ours originally and it originated from egypt (not from the levant)

6-feteer meshalaltet is ours and it’s egyptian

7- /kosa bel bashamel is egyptian however macrona bel bachamel isn’t

8- bamya dish / stew Is an egyptian dish 100% however the origin of the vegetable itself it’s origins is disputed

9-molokhia is an egyptian dish

10- om ali is an egyptian dessert dish 100%

11- different types of bread (eish baladi , eish shamsi , eish feeno ( is the egyptian version of the french baguette) are egyptian

12- egyptian cheese which are mish (Ω…Ψ΄) Domiati cheese Baramily cheese

(All of those are ours)

13-egyptian kishk is ours

14-fakhfakhina is ours and it’s egyptian

15-foie gras has an egyptian version separate the french one

16-alexanderian liver and liver is ours (ΩƒΨ¨Ψ―Ψ© ΩˆΩƒΩŠΨ―Ψ© Ψ§Ψ³ΩƒΩ†Ψ―Ψ±Ψ§Ω†ΩŠ

17-bessara is 100% egyptian (thanks to aia1904 for mentioning it )

18-hamam mahshi is egyptian (aia1904)

19-belila is an egyptian dish however it has an alternate an Eastern Orthodox regions dish called koliva so it has a separate egyptian version ) btw thanks aia1904

20-Al-Hawawshi is ours and it was made and invented in egypt (Zillak)

Now what isn’t ours !

A) shawarma is from the turks/ greeks it’s not egyptian or from the levant

B)zalabia originated from Persia

C)couscous is from morrocco

D) baklava is assayrian , turkish , greek

E)kunafah is from the levant

D) ghoriba is from morocco

F)roz belaban (Ψ±Ψ² Ψ¨Ω„Ψ¨Ω†) , rice pudding is of chinese origin

G)baba ganoush (Ψ¨Ψ§Ψ¨Ψ§ ΨΊΩ†ΩˆΨ¬) is lebanese /levant

My observations on characters eating the cuisine of other species
  • Picard, Jadzia Dax, Deanna Troi, Neelix, and to a lesser extent Worf, often try many different species' food, although as a kid, Worf did go through a phase of only wanting Klingon food.
  • Kira mainly eats Bajoran food, although she occasionally eats human food. Never seen her eat any other species' food, though.
  • Generally only Klingons seem to like Klingon food, but Neelix, Jadzia Dax, Dr. Bashir, and Melora (from that one episode of DS9) are exceptions.
  • While not food exactly, everyone seems to drink alcohol from other species (just look at Romulan ale and Saurian brandy). Blood wine, however, seems to be strictly a Klingon thing.
  • Rom eats human food sometimes but Quark finds it gross. Not sure about Nog. I've never seen a non-Ferengi eat Ferengi food.
  • Only Cardassians seem to like their food.
  • I don't recall seeing Suder or the Trois eating their native food. In fact, I'm not sure what Betazoid food is even like.
  • Vulcans are somewhat prone to cross-species dining, although they typically still eat plain food regardless of planet of origin.
