Since I was out of my usual unsalted grocery store brand butter today, I had to use some precious Kerrygold butter instead since that's all I had to bake with. What a fabulous substitute! The oatmeal raisin cookies turned out so addictive. Do any of you use Kerrygold exclusively for baking?

Everyone else in my bakery called out today. I got stuck filling an order of 150 rolls along with setting up the bakes for tomorrow. By myself.
I walked into my job today and was met by the older woman who usually helps me out with how much of everything we need prepped for the next day's breads. All she said to greet me was "We've got a problem." Turns out, everyone else who was scheduled today decided to call out, so it's just me and her. She said she'd handle the stuff I haven't learned to do yet (aka packing out all the soft sided breads) so I'd have to handle my usual workload of setting up everything to be baked for tomorrow, as well as setting up a custom order of 150 sourdough rolls... All on my own.
I got the order done in the first hour of my shift, but before I could get started on setting up the frozen doughs for tomorrow's bake, I just kind of... Broke. Ran to the men's room and here I am, sitting on a toilet and crying for the first time in months. I've been working this job for 11 months now and I've already suffered multiple joint injuries and strain from overworking. I'm not even 28. I shouldn't be having to use knee wraps and wrist braces, I'm too young to have the chronic joint pains this job has given me. I'm so desperately looking for a way out of this hellhole but nothing's opened up yet. I feel trapped in this shitty, awful store. They keep saying they're the best place for employees to work and yet every day I hear coworkers talking about how much they wish they could leave.

Sorry I haven't been responding, about 4 hours into my shift I got my foot snagged on a ramp on the loading dock and ate shit, landed on my right elbow and heard a pop. Got rushed to the ER and got x-rays done, turns out it's a broken elbow. So I'm gonna use the paid injury leave to step up my job search!

my third attempt turned out ok. boiling water on the bottom rack helped the crust get crispy this time. i can now bake beef ribs, sugar and butter cookies, banana bread, and poorly made french bread :D huzzah

Parents stopped by for brunch. Decided to try making Eggs Benedict into a bake. English muffins, eggs, Canadian bacon, sharp cheddar, and of course hollandaise. Topped with fresh chives and pepper. Turned out great but might do poached eggs on top next time.
